Mo's Big Fat Greek Chili

I enjoy white chili's and this has become one of my favorites along with friends and family. This chili has been entered in contests and has one most unique twice.

    Ingredients

    • 1 Medium onion diced
    • 4  Garlic cloves chopped
    • 1 Lb Ground turkey of chicken - browned and drained
    • 1 14 oz can Stewed tomatoes diced
    • 1 15 oz can Toamtoe Sauce
    • 1 15 oz can Garbanzo beans-drained
    • 1 14 oz can Artichoke hearts drained and diced (not marinated)
    • 1 6 oz can Black olives, sliced
    • 2 Tsp Oregano or Italian seasoning
    • 1 Tsp Thyme dried or fresh
    • 1 1/2 Tsp Cayene pepper (or more if you like)
    • 4  Bay leaves

    Directions

    1. 1Combine all into a crock pot. Heat on low 4 to 6 hours. You can thin it with vegetable or chicken stock.
    2. 2Top chili with crumbled Feta cheese or sour cream. You may also toast pita bread. Slice into wedges brushed with olive oil sprinkle with kosher or sea salt and a little Italian seasoning. Heat in oven @ 350 for 5 minutes.

    This was a good start. I added fresh mint, fresh oregano, cinnamon, lemon juice, and used kalamata olives instead on black olives, for real Greek flavors! Yum!!
