Ingredients

Dip

jar (12 oz) roasted red bell peppers, well drained

teaspoon smoked paprika

Fresh thyme sprigs

Directions

  • 1 In food processor, place Dip ingredients. Cover; process with quick on-and-off motions until smooth.
  • 2 Spoon into serving dish; garnish with thyme sprig and pomegranate seeds. Serve with chips.
Tips  

To toast walnuts, sprinkle in ungreased heavy skillet. Cook over medium heat 5 to 7 minutes, stirring frequently until walnuts begin to brown, then stirring constantly until walnuts are light brown.

In 2-quart stainless steel saucepan over medium heat, stir 4 cups bottled plain pomegranate juice, 1/3 cup granulated sugar and 2 teaspoons freshly squeezed lemon juice. Cook 2 to 3 minutes, stirring occasionally, until sugar dissolves. Reduce heat to medium-low. Cook uncovered, 60 to 90 minutes, stirring occasionally, until reduced to 1 cup and consistency is like thick syrup. Remove from heat. Let stand at room temperature 30 minutes. Transfer to jar but do not cover; allow to cool completely. Cover and refrigerate up to 3 months.
