Creamy mushroom soup - perfect for a warm hearty dinner that ready in just 25 minutes!

Ingredients

1/4
cup margarine or butter
1
(8-oz.) pkg. (3 cups) sliced fresh mushrooms*
1/4
cup finely chopped onion
1/4
cup finely chopped celery
3
tablespoons all-purpose flour
1/2
teaspoon dried basil leaves, finely crushed
1/4
teaspoon salt
1/8
teaspoon pepper
1 1/2
cups chicken broth
1 1/2
cups milk

Directions

  • 1 Melt margarine in large saucepan over medium meat. Add mushrooms, onion and celery; cook and stir until tender.
  • 2 Stir in flour, basil, salt and pepper. Cook 1 minute or until smooth and bubbly, stirring constantly. Gradually add chicken broth and milk. Cook until slightly thickened, stirring constantly. DO NOT BOIL.
Tips  

*One 4.5-oz. jar sliced mushrooms can be substituted for fresh mushrooms. Reserve the mushroom liquid for part of the chicken broth.
