No-Bake Energy Cookies

Fiber One™ cereal is combined with peanut butter, mini chocolate chips and honey for delicious no-bake cookies.


cup Cereal Fiber One™ Cereal
cup sliced almonds
cup mini chocolate chips
cup honey
cup smooth peanut butter
teaspoon vanilla extract


  • 1 Stir all ingredients together in a large bowl until well mixed.
  • 2 Cover bowl with plastic wrap then refrigerate at least 30 minutes.
  • 3 Roll cookie dough into 20, 1-inch balls.
  • 4 To store, cover with plastic wrap or keep in an airtight container and refrigerate up to one week.

Need a healthier snack when you’re on the run? How about a cookie that actually makes your doctor proud, while keeping all those sweet cravings at bay?

Honey, chocolate, almonds, peanut butter and high fiber cereal come together in these No-Bake Energy Cookies to make the easiest and tastiest no-bake cookie we’ve had in a while. The recipe makes just about 20 of them, too. So, you’re set for the week … eat them for breakfast, a snack or even dessert. They’re great with a big glass of milk or a nice hot cup of coffee.

To make the little guys, you’ll need a cup of high fiber cereal. We used the original Fiber One, which worked just perfectly!

Basically, all you have to do is throw everything into a big ol’ bowl and stir.

Refrigerate it for half-an-hour then roll into cute little cookie balls. Easy, right?
