    Ingredients

    • 1 package spicy Italian turkey sausage
    • 1 carton chicken broth, reduced sodium
    • 1 carton water (use chicken broth carton)
    • 1 big handful barley, rinsed
    • 4 stalks celery
    • 4  carrots
    • 1  onion
    • 1 bunch spinach

    Directions

    1. 1Slice the skin off the sausages and roll them into little meatballs. Using non-stick spray, fry the meatballs in a pan. When cooked, drain fat and rinse off meatballs. Do not rinse away all the grease, save a little for flavor.
    2. 2Chop celery, carrots and onion. Add meatballs, celery, carrots, onion, rinsed barley, broth and water to a large pot and boil gently for 20 minutes.
    3. 3Reduce heat, add spinach and simmer until done (vegetables are soft and barley is swollen).
