Ingredients

  • 2 large red garnet yams
  • 1 cup extra virgin olive oil
  • 1 cup canola or vegetable oil
  • smoked sea salt to taste

Directions

  1. 1Use a sharp chef's knife to slice the yams into slices about 1/16" thick (leave the skin on).
  2. 2Heat the oils together in a large, heavy-bottomed pot, over medium heat, just until it begins to bubble.
  3. 3Working in batches, cook the sweet potatoes in the hot oil until the edges are brown and the slices begin to crinkle.
  4. 4Drain on paper towels and sprinkle generously with the smoked sea salt.
  5. 5Serve warm, or cool to room temperature.
  6. 6Store the chips in an airtight container for up to 4 days.
