This ultra-easy, flavorful lime, pistachio nut and olive oil yogurt cake is incredibly moist and pleasantly sweet. A thin powdered sugar icing made with lime juice and a garnish of salty pistachio nuts is the perfect finishing touch.

Ingredients

Cake

containers (5.3 oz each) Yoplait® Greek blended coconut yogurt

cups granulated sugar

cup full-flavored olive oil

eggs

tablespoon grated lime peel

cups Gold Medal™ all-purpose flour

tablespoon baking powder

Icing

3/4
cup powdered sugar
Juice from 1/2 of a lime
1
tablespoon whipping cream or milk

Garnish

Additional grated lime peel and chopped shelled pistachio nuts, if desired

Directions

  • 1 Heat oven to 350°F. Spray two 8- or 9-inch round cake pans with cooking spray.
  • 2 In large bowl, beat yogurt, granulated sugar and oil with electric mixer on medium speed until well combined. Add eggs, 1 at a time, until well beaten, followed by 1 tablespoon lime peel. Add flour and baking powder; beat about 1 minute or until batter is smooth. Divide batter between pans.
  • 3 Bake 30 to 35 minutes or until deep golden brown around edges and toothpick inserted in center comes out clean. Cool in pans 10 minutes. Run knife around edges, and turn cakes onto serving platters.
  • 4 In small bowl, stir together Icing ingredients; drizzle over warm cakes. Top with additional lime peel and chopped pistachio nuts. Serve warm or at room temperature.
Tips  

To make ahead and freeze the cakes, wrap the cooled cakes in foil, and place them in a resealable freezer plastic bag. Freeze up to 1 month.
