Enjoy these orange segment filled delicious cream finger sandwiches which are made using baked quick bread.

Ingredients

(11-oz.) can mandarin orange segments, drained, reserving 1/4 cup liquid

pkg. nut or date quick bread mix
1/2
teaspoon cinnamon
1/4
teaspoon ginger
1/2
cup water

tablespoons oil

egg

(8-oz.) pkg. cream cheese, softened
1/8
teaspoon ginger

Directions

  • 1 Heat oven to 350°F. Grease bottom only of 8x4 or 9x5-inch loaf pan. Chop mandarin orange segments; reserve 1/4 cup for filling.
  • 2 In large bowl, combine remaining mandarin orange segments, 1/4 cup mandarin orange liquid, bread mix, cinnamon, ginger, water, oil and egg; stir 50 to 75 strokes or until dry particles are moistened. Pour into greased pan.
  • 3 Bake at 350°F. for 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Remove from pan; place on wire rack. Cool completely.
  • 4 In small bowl, combine cream cheese, reserved 1/4 cup mandarin orange segments and ginger; beat well. Cut loaf into 16 slices. Spread cream cheese filling on half of slices; top with remaining slices to form sandwiches. Cover; refrigerate at least 15 minutes to allow filling to set.
  • 5 To serve, cut each sandwich into thirds. Store tightly covered in refrigerator.
