You won’t believe how easy it is to whip up great-tasting fish. The secret is in the simple orange-ginger marinade.

Ingredients

Grated orange peel
Orange juice
Finely chopped gingerroot
Vegetable oil
Fish steak

Directions

  • 1 Mix orange peel, orange juice, gingerroot and oil (about 1 teaspoon grated orange peel, 1/4 cup orange juice, 1 teaspoon finely chopped gingerroot and 2 teaspoons oil per pound of fish). Marinate fish in orange juice mixture at least 1 hour before broiling. Remove fish from marinade; reserve marinade.
  • 2 <B>To Grill:</B> Spray grill rack with cooking spray before heating grill. Place fish steaks on grill rack. Cover and grill 4 inches from medium heat 10 to 20 minutes, brushing occasionally with marinade and turning once, until fish flakes easily with fork.
