With its slightly sweet flavor, the pistachio has a natural affinity for orange, such as in this cloud of chilled chiffon-style pudding.

Ingredients

envelope unflavored gelatin
1/2
cup orange juice
1/2
cup nonfat vanilla yogurt

tablespoons orange-flavored liqueur or orange juice

tablespoon lemon juice
1/3
cup sugar
1 1/2
teaspoons grated orange peel
4
ice cubes
1 1/2
cups frozen light whipped topping, thawed
1
tablespoon chopped shelled pistachios

Directions

  • 1 In small saucepan, sprinkle gelatin over 1/4 cup of the orange juice; let stand 2 minutes to soften. Cook and stir over low heat until gelatin is dissolved. Cool 10 minutes or until slightly cooled.
  • 2 In blender container, combine remaining 1/4 cup orange juice, yogurt, liqueur, lemon juice, sugar and orange peel. Blend at high speed for 20 to 30 seconds or until combined. With blender running, add gelatin mixture and ice cubes, blending at high speed for 1 minute or until ice cubes are crushed and mixture is thoroughly combined.
  • 3 Pour into medium bowl; gently stir in whipped topping. Pour into individual stemmed glasses. Sprinkle with pistachios. Place in refrigerator or freezer for 15 minutes to chill quickly. If desired, garnish with orange slices and fresh mint leaves. Store in refrigerator.
