Ingredients

  • 3 tablespoons pesto
  • 4 chicken breasts halved
  • 1 cup panko bread crumbs
  • 1/2 fine dry bread crumbs
  • 2 teaspoons paprika
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper

Steps

  • 1
Heat oven to 400° F. Lightly grease a baking pan large enough to hold the chicken in a single layer.
  • 2
Wash chicken breasts and pat dry. Gently pound the chicken between sheets of plastic wrap to even thickness.
  • 3
In a food processor, pulse the panko and dry bread crumbs with the paprika, salt, and pepper, until well combined.
  • 4
Rub each chicken breast with about 1 to 2 teaspoons of pesto, then press in the crumbs to thoroughly coat. Arrange the chicken in the baking pan and bake for about 20 minutes, or until chicken is cooked through.
