Oven Baked Pesto Chicken

What doesn't pesto work with? You could rub it on my shoe and I would eat it. But add some it to chicken & bake it and you have this great easy chicken recipe you will want to share with everybody!

    Ingredients

    • 3 tablespoons pesto
    • 4 Chicken Breasts Halved
    • 1 Cup Panko Bread Crumbs
    • 1/2 Fine dry bread crumbs
    • 2 Teaspoons Paprika
    • 1/2 Teaspoon Salt
    • 1/8 Teaspoon Ground Black Pepper

    Directions

    1. 1Heat oven to 400°. Lightly grease a baking pan large enough to hold the chicken in a single layer.
    2. 2Wash chicken breasts and pat dry. Gently pound the chicken between sheets of plastic wrap to even thickness.
    3. 3In a food processor, pulse the panko and dry bread crumbs with the paprika, salt, and pepper, until well combined.
    4. 4Rub each chicken breast with about 1 to 2 teaspoons of pesto, then press in the crumbs to thoroughly coat. Arrange the chicken in the baking pan and bake for about 20 minutes, or until chicken is cooked through.

    nevermind!! sorry. I found it... It is pretty hard to spread pesto on a raw chicken breast. but this recipe works well
