Oven Fried Chicken

Healthy chicken recipe that uses crushed corn chips as the coating. Save time by using chili flavored corn chips, rather than lots of different spices. Low fat, kid-friendly dinner!

    Ingredients

    • 3 cups chili-flavored corn chips, finely crushed
    • 4  skinless chicken drumsticks
    • 4  skinless chicken thighs
    • 3 tablespoons mayonnaise

    Directions

    1. 1Preheat oven to 400 degrees.
    2. 2Coat a 15- x 10-inch jellyroll pan lightly with cooking spray.
    3. 3Place crushed chips in a bowl.
    4. 4Rub chicken with mayonnaise; dredge in corn chip mixture to coat completely.
    5. 5Coat chicken lightly with cooking spray.
    6. 6Place chicken in prepared pan, and place pan on lowest oven rack.
    7. 7Bake at 400° for 30 minutes. Do not turn. Cover and bake 15 minutes longer. Serve warm.
