Overnight French Toast

    Ingredients

    • 1/4 cup (4 Tablespoons) butter, melted
    • 3/4 cup packed light brown sugar
    • 1 loaf brioche or challah (a French bread loaf can a used) sliced into 1 1/2 inches thick slices
    • 8 eggs, slightly beaten
    • 1 cup whole milk
    • 1 Tablespoon vanilla extract
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground ginger
    • 1/2 cup pecans, measured then chopped
    • 1/8 teaspoon salt
    • (optional) maple syrup and powdered sugar for topping

    Directions

    1. 1In a small bowl combine brown sugar and melted butter and pour on the bottom of a 9x13 baking dish.
    2. 2Arrange slices of bread in the baking dish overlapping if necessary.
    3. 3Combine milk, eggs, vanilla, salt, cinnamon, and ginger in a bowl and pour evenly over bread slices.
    4. 4Sprinkle chopped pecans over bread slices.
    5. 5Wrap tightly with plastic wrap and place in the refrigerator for 4-12 hours.
    6. 6In the morning, take the casserole out of the fridge for at least 10 minutes while you are preheating your oven to 350 degrees.
    7. 7Bake casserole for 30-35 minutes. If top starts browning too quickly place a foil loosely over the top of the casserole for the last 10 minutes or so. You want it to cook long enough to make sure the bottom part is cooked but don't dry it out completely.
    8. 8Remove casserole from oven and let it cool slightly before serving. Serve with a dusting of powdered sugar and a drizzle of maple syrup.

    French bread is sturdier than challah or brioche but it should still work but will look different than the picture which used challah. How did it go?

    I am currently making this now, My husband picked up french bread but I don't think it looks the same as the picture. I hope it still taste good... But currently its not looking like the picture at all.. *confused*

    I made this for a teacher breakfast and they gave it an A+ rating! I opted for no pecans for allergy reasons and I didn't have vanilla, so I just added maple syrup directly to the recipe.

    when I use french bread I try to buy wide long loaf or skinny. if skinny I figure 4 sluces per person and you can serve them buy the skice. with raisin bread it is yummy. we love using fruit bread

    I do not use nuts but any breads...apple is good cinnamon swirl...julekakalla- sweet bread made from hot cross bun dough...it is yummy and I do not use ginger but use nutmeg. any sweet breads work. i buy day old freeze them

    I have a similar recipe...we add 2 TBSP Karo Syrup with butter and brown sugar ...melt then put bread eggs...and when bakedvnot soaky but syrup on botyom. us server to dish up syrup side up. i also bake 40minutes making sure it is cooked

    @JumpinBean, I've never dared not to let it sit. I know that letting it sit allows the liquid to get absorbed so I'm not sure if it will work!

    I found the brown sugar on the bottom to be unnecessary. I will just butter the bottom of the baking dish next time. I will also drain the excess egg mixture from the baking dish before baking to keep the bottom from being too soggy. Some recipes call for turning the bread and I may do that as well and just add the nut topping after it has been turned. But it was very tasty! The vanilla is the predominant taste. Also, use Nutmeg instead of cinnamon. It's a much more appropriate flavor for french toast!

    Better than Paula Dean's and easier to make! The brioche is critical; italian bread won't turn out as tasty. To make it more like a casserole (and easier to serve) cut the bread into large cubes (otherwise people think they need to take an entire slice and there aren't many when you cut them an inch and a half thick). Added to our family's "Tested Best" recipes for sure!

    Out of milk so substituted half egg nog and half whipping cream for the milk. Added fresh nutmeg and sprinkle the spices on the bread slices right before pouring liquid over the dish. In the morning, combine melted butter, the brown sugar, and nuts and place on top of bread slices. I used a french bread baguette (smaller pieces of bread) from Panera Bread. Zipped thru their drive in window, and avoided the crowds at my regular grocery store. I made one, then three more during the holidays. Served with green chili cheese grits as a balance of sweet and spicy.

    I made this for Christmas Eve dinner and it was delicious! My only suggestion would be to have your bread slices lay flat (not overlapped) so the egg/milk mixture completely soaks in rather than becoming a cooked layer on the bottom.

    The photo gives the apppearance that the French Toast is stuffed however, the directions don't indicate that it is. Can anyone figure out why the pecan and brown sugar and butter seem to be in the middle of the bread?
