Papas a la Huancaina

A Peruvian potato dish thats loaded with cheese, olives, and eggs. Served cold at a picnic, it is reminiscent of potato salad. Served warm with a steak, and its a nice twist on meat and potatoes.

    Ingredients

    • 6 Medium Yukon Gold Potatoes
    • 3  Hard Boiled Eggs
    • 1 Cup Evaporated Milk
    • 10 Ounces Feta
    • 1  Habanero
    • 1 Clove Garlic
    • 1  Lime
    • 15  Kalamata Olives
    • Parsley

    Directions

    1. 1Roast the potatoes at 350 with olive oil, salt, and pepper until tender.
    2. 2For the spicy cheese sauce: In the blender, combine the habanero(seeded), garlic, milk, cheese, and lime juice. Blend until smooth.
    3. 3Chop up the eggs, olives, and parsley. Cut the potatoes in to large bite sized pieces and arrange them on a serving platter.
    4. 4Pour the sauce over the potatoes. Top with the egg, olives, and parsley.
    5. 5Serve warm or cold!

    this is not peruvian, the peruvian recipe is, Condensed milk Queso not feta cheese, Pallio Sprry forgt the spelling, Aji peppers which are the peruvian yellow peppers, Some oil and a few crakers to make it thicker. Blend it nice and creamy. after boiling and peeling hte potatoes you slice in half then poor the yellow hauncaina sauce over top with lettuce under and a sliced hard boiled egg and a peruvian olive.
