    Ingredients

    • For the Parmesan Crust:
    • 1/4 cups Progresso Italian Seasoned Breadcrumbs
    • 1/4 cup freshly grated parmesan
    • 1 tablespoon olive oil
    • For the Broccoli:
    • 3 crowns fresh broccoli
    • 2 1/2 tablespoons olive oil
    • 1 1/2 tablespoons Progresso balsamic vinegar
    • 1 1/2 teaspons stone ground or dijion mustard

    Directions

    1. 1Preheat oven to 425 degrees F. Line a baking sheet with foil. Combine the breadcrumbs, Parmesan, and oil. Spread on the baking sheet and bake for 3-5 minutes, until crispy and golden. Set aside in a small bowl.
    2. 2Cut the broccoli into individual florets. In a medium bowl, whisk together the olive oil, balsamic vinegar, and dijion mustard. Add the broccoli, tossing to coat.
    3. 3Spread the broccoli out on the baking pan you already prepared for the breadcrumbs. Season to taste with pepper, if desired. Return the pan to the oven and roast for 5minutes, or until your preferred doneness is achieved.
    4. 4Remove the pan, sprinkle the breadcrumb mixture on top and return to the oven for 2-3 minutes. Serve immediately.

    The Balsamic/Mustard was not a very good taste but if you like the vinegar taste you may like it.

    I like to roll the seasoned florets in the toasted crumbs then bake for those last 2-3 minutes.

    This was a nice new broccoli side dish that I think we will be using again. I only had 2 crowns of broccoli so the balsamic/mustard flavor was a bit much but the crunchiness of the breadcrumb/Parmesan topping more than made up for that!
