Enjoy this delicious perch topped with Parmesan cheese that’s ready in just 20 minutes – perfect for a dinner.

Ingredients

1/4
cup grated Parmesan cheese
1/4
cup fat-free mayonnaise or salad dressing
1
tablespoon unseasoned bread crumbs
1
small garlic clove, minced

lb. perch fillets

Directions

  • 1 Line 15x10x1-inch baking pan with foil; spray foil with nonstick cooking spray. In small bowl, combine cheese, mayonnaise, bread crumbs and garlic; blend well. Set aside.
  • 2 Pat perch fillets dry with paper towels; place, skin side up, on sprayed foil-lined pan. Broil 4 to 6 inches from heat for 6 to 8 minutes, turning once.
  • 3 Remove pan from oven; spread Parmesan mixture evenly over fish. Broil an additional 1 minute or until topping puffs and begins to brown and fish flakes easily with fork.
