Looking for an Italian appetizer? Then surprise your guests with this wonderful Parmesan and cannellini beans dip flavored with herbs - ready in 15 minutes!

Ingredients

tablespoon olive or canola oil
2
cloves garlic, finely chopped
2
teaspoons chopped fresh or 1 teaspoon dried thyme leaves
1
can (19 oz) Progresso™ cannellini beans, drained, rinsed
1/3
to 1/2 cup Progresso™ chicken broth (from 32-oz carton) or white wine
2
tablespoons chopped fresh Italian (flat-leaf) parsley
1
cup shredded Parmesan cheese (4 oz)
Fresh thyme sprig, if desired
Carrot sticks, if desired

Directions

  • 1 In heavy 2-quart saucepan, heat oil over medium heat. Cook garlic and chopped thyme in oil 1 to 2 minutes, stirring constantly, until garlic is light golden. Remove from heat.
  • 2 Add beans and broth to saucepan. Partially mash beans with potato masher. Stir in parsley. Heat over medium-low heat, stirring occasionally, until mixture is thoroughly heated. Stir in cheese until melted. Garnish with thyme sprig. Serve dip warm with carrot sticks, if desired.

Many dips made with sour cream or mayonnaise are high in fat. Using beans as a base for this dip keeps the fat low and gives you the added benefit of fiber. For more fiber and added nutrients, dunk carrot and celery sticks or green bell pepper slices into this dip. You can also use pita wedges or crackers for dipping; just check the label for the amount of fat and calories.
