    Ingredients

    • 4  medium (4 cups) cucumbers, thinly sliced
    • 1/2 medium red oinion thinly sliced
    • 1 1/2  teaspoons salt
    • 1  cup vinegar
    • 3/4  cup water
    • 1  cup low-fat dairy sour cream (or Greek Yogurt for a healthier version)
    • 1  tablespoon chopped fresh dill (or to taste)
    • Dash pepper
    • 1/2 juice from one lemon
    • 1 1/2 teaspoons honey (or to taste)

    Directions

    1. 1Place cucumbers in medium bowl; sprinkle with salt. Add vinegar and cool water; stir. Let stand 30 minutes, stirring occasionally; drain very well (maybe use salad spinner). For onions, same as above, except use lukewarm water to soften and mild out the flavor.
    2. 2In small bowl, combine sour cream, dill weed, honey and pepper; stir into cucumbers. Store in refrigerator.
