PBJ Sushi

Turn your ordinary PBJ into something extrapordinary by turning it into mock sushi. Kids and adults alike are sure to gobble it up!

Ingredients

  • 4 tablespoons peanut butter
  • 4 slices bread
  • 4 tablespoons grape jelly

Steps

    Lay a slice of bread on a cutting board and roll it flat with a rolling pin or plastic drinking cup.
  • 2
    Spread one tablespoon peanut butter and one tablespoon jelly over 2/3 of the bread. You can also cut the crusts off if desired.

    Roll it up, starting with the end spread with peanut butter/jelly, and press edges to seal. Repeat with remaining slices of bread, peanut butter and jelly.
  • 4
    Slice rolls with a sharp knife into 1/2 inch slices and serve.

  • When I want to have a special lunch, I LOVE to pick up some good sushi and I’m lucky to have kids that are pretty adventurous eaters and they love it, too. However, it’s fairly expensive and not something we can have every day. I found a little something that they love just as much and it’s so fun for a quick lunch...PBJ Sushi! To be honest, I think my kids just love smashing bread with a rolling pin...but hey, who wouldn't?! You can substitute turkey/cheese, hummus, anything you want. Peanut butter and jelly just happens to be a favorite around here.
