This luscious citrus sparkler gets an extra kick from peach schnapps, a delicious complement to light salads.

Ingredients

cup sugar

cups water
1
(12-oz.) can frozen orange juice concentrate, thawed
1
(12-oz.) can frozen lemonade concentrate, thawed

cups peach-flavored schnapps

cup lemon juice

(2-liter) bottle (8 1/2 cups) ginger ale, chilled

Directions

  • 1 In medium saucepan, combine sugar and 2 cups of the water; mix well. Bring to a boil. Boil 3 minutes. Set aside to cool slightly.
  • 2 In large nonmetal freezer container, combine concentrates, remaining 3 cups water, the schnapps and lemon juice; blend well. Stir in sugar mixture. Cover; freeze at least 8 hours or overnight until frozen, stirring 2 or 3 times after 2 hours.
  • 3 To serve, spoon 1/2 cup slush mixture into each glass. Add about 1/3 cup ginger ale to each; stir gently.
Tips  

A large round plastic cake holder is a great container for this recipe. Turn it upside-down and it becomes a big bowl with a lid.

Look for pretty unbreakable glasses to serve this slush. Add a sprig of mint, slice of peach or slice of lemon for a garnish.
