Peanut Butter Balls

I always make Peanut Butter Balls for the holidays. The combination of peanut butter and chocolate with a bit of crunch make it a family favorite.

This is a version of Roly-Poly PB-Chocolate Balls by BettyCrocker

    Ingredients

    • 1  cup milk chocolate chips
    • 2  tablespoons water
    • 1  cup creamy or crunchy peanut butter
    • 1/2  cup powdered sugar
    • 1/2  cup light corn syrup
    • 2  cups Rice Krispies cereal

    Directions

    1. 1Line cookie sheet with waxed paper. In 1-quart saucepan, heat chocolate chips and water over medium heat, stirring constantly, until mixture is smooth. Set aside to cool.
    2. 2In medium bowl, stir together peanut butter, powdered sugar and corn syrup until well blended. Stir in cereal until evenly coated.
    3. 3Lightly spray hands with cooking spray. For each candy, roll 1 tablespoon of mixture into 1 1/2-inch ball; place balls on cookie sheet and press slightly so bottoms of balls are flat.
    4. 4Spoon about 1 teaspoon cooled chocolate onto each ball. Refrigerate about 30 minutes or until firm. Store in covered container in refrigerator.

You can omit the corn syrup all together and use 2 Tablespoons of vegetable oil instead of water...gives the balls a shiny coat;) refrigerating the peanut butter mixture before making the balls makes this job incredibly easier

just use butter, no corn syrup necessaey. extra rice crispies make the balls crunchier.

Hi @elbee419! The peanut butter balls are stored in the fridge to help them hold their shape and keep them firm.

Is there any particular reason they need to be stored in the refrigerator?

The recipe looks perfect. I'll skip the paraffin wax... "Paraffin wax comes from plants that died millions of years ago. These plants decomposed and became crude oil. Paraffin wax is a material produced from crude oil refining."

Hi Ginny – We checked with our pals in the Betty Crocker Kitchen. They aren’t fans of using wax in a recipe that you plan to eat. They’ve shared a link with us that has some useful info: http://www.ochef.com/674.htm
