These delicious peanut butter and banana drop cookies are perfect for an anytime dessert - ready in just over an hour.

Ingredients

cup granulated sugar
3/4
cup chunky peanut butter
1/2
cup butter or margarine, softened
1
cup (2 to 3 medium) mashed ripe bananas
2
teaspoons vanilla
3
eggs
1 1/2
cups all-purpose flour
3
cups quick-cooking or old-fashioned oats
1
teaspoon baking soda
1
teaspoon ground cinnamon
1/2
teaspoon salt
Powdered sugar, if desired

Directions

  • 1 Heat oven to 350°F. Lightly spray cookie sheets with cooking spray.
  • 2 In large bowl, beat sugar, peanut butter and butter until light and fluffy. Stir in bananas, vanilla and eggs until well blended. Stir in flour, oats, baking soda, cinnamon and salt; mix well.
  • 3 Onto cookie sheets, drop by rounded teaspoonfuls 2 inches apart. Flatten slightly with back of spoon. Bake 8 to 14 minutes or until light golden brown. Immediately remove from cookie sheets to cooling rack. Cool completely. Sprinkle with powdered sugar.
Tips  

These wholesome cookies are a great way to use those extra bananas that are too ripe to eat but you just can't bare to part with. Rather than sprinkle with powdered sugar, frost the cookies using that can of chocolate or vanilla frosting that you got on sale. These cookies freeze well, so keep a container in the freezer for lunch bags or unexpected guests. It will be cheaper than buying cookies at the bakery.
