Ingredients

Fruit Mixture

cups (4 to 5 medium) sliced peeled pears

cup fresh or frozen cranberries

(16-oz.) can apricot halves, undrained

cup sugar

teaspoon cinnamon

to 3 teaspoons grated orange peel

Topping

cups all-purpose flour
1/2
cup sugar
1
teaspoon baking powder
1/4
teaspoon salt
1/4
cup milk
1
tablespoon margarine or butter, melted
2
eggs

Directions

  • 1 Heat oven to 350°F. Grease 2-quart casserole. In medium saucepan, combine all fruit mixture ingredients. Cook over medium heat for 10 to 15 minutes or until mixture is hot, stirring occasionally.
  • 2 Meanwhile, in medium bowl, combine flour, 1/2 cup sugar, baking powder and salt; blend well. Add milk, margarine and eggs; mix until batter is smooth.
  • 3 Pour hot fruit mixture into greased casserole; spoon topping over fruit.
  • 4 Bake at 350°F. for 30 to 40 minutes or until topping is golden brown. Serve warm.
