Ingredients

  • 1/2  cup corn flake crumbs
  • 1/4  cup (1 oz.) finely ground pecans
  • 1/4  teaspoon paprika
  • 1/8  teaspoon garlic powder
  • 1/8  teaspoon ground red pepper (cayenne)
  • 1  lb. catfish fillets, cut into 4 pieces
  • 1  egg white, slightly beaten

Directions

  1. 1Heat oven to 450°F. Spray 15x10x1-inch baking pan with nonstick cooking spray. In large resealable plastic bag, combine crumbs, pecans, paprika, garlic powder and ground red pepper. Dip fish into egg white. Shake dipped fish in crumb mixture to coat. Place in sprayed pan.
  2. 2Bake at 450°F. for 15 to 20 minutes or until fish flakes easily with fork. If desired, salt and pepper to taste.
