Mint and brownies pair up as a delicious combination. Brownies and rainbow chip frosting; what could be easier!

Ingredients

box (18.3 oz) Betty Crocker™ fudge brownie mix
Water, oil and egg called for on brownie mix box
1
container Betty Crocker™ Rich & Creamy rainbow chip frosting
1/4
teaspoon mint or peppermint extract
1
to 2 drops green food color

Directions

  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). Make brownies as directed on box for 13x9-inch pan. Cool completely, about 1 hour.
  • 2 In small bowl, stir together frosting, extract and food color until smooth.
  • 3 Spread frosting evenly over brownies. Cut into 5 rows by 4 rows. Store tightly covered.
Tips  

If you don't have any mint extract, it can be omitted. The frosting can be tinted pink or blue if you like.

You can stir about 3/4 cup of mint or regular chocolate chips into the batter, or top the brownies with sprinkles.
