Traditional and expected each fall, these pumpkin bars are perfect in every way -- from the spicy cake to the creamy sweet frosting.

Ingredients

and 2/3 cups sugar

cups pumpkin
1
cup oil
4
large eggs
2
teaspoons baking powder
1/2
teaspoon salt
1
teaspoon soda
2
teaspoons cinnamon
1/4
teaspoons cloves
1/4
teaspoons ginger
2
cups flour
Cream cheese frosting (below)
Candy pumpkins for garnish, if desired

Directions

  • 1 Preheat oven to 350° F. Spray 15x11 pan with baking spray.
  • 2 Beat sugar, pumpkin and oil. Add eggs, beating after each. Add baking powder, salt and soda and mix well. Add flour and beat until well blended.
  • 3 Bake at 350° F for 20 - 25 minutes. Check with toothpick for doneness. Cool completely on cooling rack before frosting.
  • 4 CREAM CHEESE FROSTING: Beat 8 oz. softened cream cheese, 1/2 cup softened butter, and 2 cups powdered sugar on high speed until well blended and smooth. Add vanilla. Spread immediately on cooled pumpkin bars.
