Ingredients

cup purchased pesto sauce

(8-oz.) pkg. cream cheese, softened

oz. (2/3 cup) crumbled feta cheese
1
(2-oz.) jar diced pimiento, well drained on paper towel
1/4
cup chopped fresh parsley
2/3
cup pine nuts

Directions

  • 1 In food processor bowl with metal blade, combine pesto, cream cheese and feta cheese; process until smooth. Transfer to large bowl. Carefully stir in pimiento. Refrigerate several hours or overnight.
  • 2 Divide mixture in half. On waxed paper, form into two 6x1 1/2-inch logs; roll in parsley and pine nuts. Wrap and refrigerate until serving time. Serve with crackers.
Tips  

This recipe makes two logs. Save one for yourself. Give the other wrapped on a decorative wooden cutting board. Include a box of tasty crackers.
