Pesto Chicken Pasta

My garden is full of basil right now, so it's pesto making time. This recipe calls for fresh pesto (I like walnuts in mine instead of pine nuts) and pasta like farfalle or angel hair.

    Ingredients

    • 1/2 cup pesto (divided)
    • 4 Chicken Breasts Pounded to 1/4 inch thickness
    • 1 Cup Panko Bread Crumbs
    • 1/2 Teaspoon Salt
    • 1/8 Teaspoon Ground Black Pepper
    • 3 cups cooked pasta

    Directions

    1. 1Heat oven to 425°. Lightly grease a baking pan large enough to hold the chicken in a single layer.
    2. 2Wash chicken breasts and pat dry. Gently pound the chicken between sheets of plastic wrap to 1/4 inch thickness.
    3. 3Cook pasta according to directions, drain.
    4. 4Rub each chicken breast with 2 teaspoons of pesto, then press each side in the crumbs to thoroughly coat. Arrange the chicken in the baking pan and bake for about 15 minutes, or until chicken is cooked through and bread crumbs are lightly browned.
    5. 5Coat warm pasta with half of the pesto and served on plates topped with a crispy pesto chicken breast.
