Ingredients

  • 1  cup cut-up cooked chicken breast
  • 2  tablespoons refrigerated reduced-fat or regular basil pesto
  • 4  whole wheat pita (pocket) breads (6 inch)
  • 1/2  cup pizza sauce
  • 1/4  cup chopped onion
  • 1/4  cup chopped yellow bell pepper
  • 1/4  cup shredded reduced-fat mozzarella cheese (1 oz)
  • 2  tablespoons shredded Parmesan cheese

Directions

  1. 1Heat oven to 400°F. In medium bowl, mix chicken and pesto until blended.
  2. 2Place pita bread in single layer on cookie sheet. Spread 2 tablespoons pizza sauce on each pita. Divide chicken mixture evenly among pita bread. Top with remaining ingredients.
  3. 3Bake about 10 minutes or until cheese is melted. Cut pizzas into wedges.

i made these last night with my boyfriend but we used naan bread instead of pita. we also substituted the cheese with non-dairy, vegan daiya cheese and it took a little longer to melt but they still came out delicious! great recipe :)

The hubs and I both love it. We've eaten it twice this week so far! To make it an extra quick meal, we used chopped canned chicken (which I'm not a huge fan of) but with the flavor packed pesto, you couldn't tell. Ingenious recipe!

I just made this recipe and it was both delicious and filling. The pita bread worked surprisingly well as crust.
