These are not the traditional pigs in a blanket-they are a healthier version.

Ingredients

package (14 oz) turkey breakfast sausage links (14 links)
1
cup Fiber One™ original bran cereal
1
cup Gold Medal™ all-purpose flour
1
tablespoon sugar
2
teaspoons baking powder
2
tablespoons canola oil
1
egg
1 3/4
cups fat-free (skim) milk
1
teaspoon vanilla
1
cup reduced-calorie maple-flavored syrup

Directions

  • 1 Cook sausages as directed on package. Spray electric griddle or skillet with cooking spray if necessary. Heat over medium heat (350°F).
  • 2 Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
  • 3 In large bowl, mix cereal, flour, sugar and baking powder. In small bowl, beat oil and egg with whisk. Add egg mixture, milk and vanilla to flour mixture; stir with whisk until well blended.
  • 4 For each pancake, pour about 1/4 cup batter onto hot griddle. Cook until puffed and full of bubbles but before bubbles break. Turn; cook other side until golden brown.
  • 5 To serve, wrap each sausage in a pancake; secure with a toothpick. Drizzle with syrup.
Tips  

Add a banana and some orange juice for a great breakfast.

Make a double batch and store in the refrigerator for quick and healthy breakfasts on busy school mornings.
