Ingredients

  • 1  package (14 1/2 oz) angel food cake mix
  • 1  can (8 oz) unsweetened crushed pineapple
  • 8  oz fat-free frozen whipped topping, thawed
  • 1/2  cup (2 oz) toasted coconut

Directions

  1. 1Heat oven to 350°F. Spray a 13x9-inch baking dish with cooking spray.
  2. 2In large bowl, stir together cake mix and pineapple. Pour into prepared baking dish.
  3. 3Bake 20 minutes or until toothpick inserted in center comes out almost clean. Cool completely on a rack.
  4. 4Spread whipped topping over cake. Sprinkle with coconut. Cover and refrigerate until ready to serve.

After I took the cake out from the oven, I sprinkled it with a little bit of Malibu rum and let it cool, then frosted with the Cool Whip. Ohhhhhhh yum!

Good golly, it is so simple. THIS particular recipe has only 2 ingredients for the cake: the dry cake mix & the can of crushed pineapple including juice. The juice in the can and the juicy fruit replace all other items on the box and make a nice mooist angel food cake. There are many other versions out there, but this is the easiest, quickest, least fattening and is just yummy in my book! Also, I sometimes add a sprinkle of coconut to the batter since I often eat it without the whipped topping. ENJOY!

I had to toast my own coconut in the oven, but it was so easy, and so good. I was confused by the reviews I was reading telling me different ways to make the batter, but I just used the four ingredients it called for and it turned out amazing.

I think it would work both ways. If youmake the cake batter, then you have to drain the pineapple. If you're going to use the pineapple juice, then just mix the angel food cake mix powder with it.

try it both ways....see which one u like better..they both work..but if u drain the pineapple make sure its really drained all the way if its not then the cake wont rise like it supposed too it will come out flat
