This tropical island cocktail inspired frozen dessert combines pineapple juice and coconut water with a touch of rum - the result is as refreshing as it is light and easy.

Ingredients

can (11.8 oz) coconut water

cans (6 oz each) pineapple juice

tablespoon fresh lime juice
1/8
teaspoon rum extract

Directions

  • 1 In medium bowl, stir all ingredients until combined. Pour into 8-inch square (2-quart) glass baking dish.
  • 2 Cover; freeze 3 hours, stirring with fork every 30 minutes, until firm. Before serving, stir with fork until fluffy. Granita can be frozen in a freezer container up to 1 month.
Tips  

Coconut water and coconut milk are different products. You can find both in the Mexican or Latin section of your supermarket, so read the labels carefully to make sure you purchase the correct one.
