    Ingredients

    • 1/2 cup (1 stick) butter, slightly softened
    • 1 (17.5 oz.) pouch Betty Crocker sugar cookie mix
    • 1/2 cup powdered sugar
    • 1/2 cup flour
    • 2 egg WHITES (do not use whole egg or the yolk will turn cookies orange)
    • red food coloring (about 12-14 drops, or until desired pink color is achieved)
    • 1 cup baking chips (dark chocolate, semi-sweet chocolate, milk chocolate, white chocolate or candy pieces like M&Ms)

    Directions

    1. 1Preheat oven to 375 degrees (F).
    2. 2Cream butter and cookie mix. Add powdered sugar and flour and mix until well blended and crumbs are fine. Add egg whites and mix until well blended and mixture sticks together. Add red food coloring, several drops at a time, mixing after each addition until desired pink color is achieved and is uniform throughout the dough. Stir in chocolate pieces.
    3. 3With a 1-1/4" cookie scoop (or by rounded spoonful), drop cookies onto ungreased cookie sheet. Bake for 10 minutes, or until set but not brown. Allow to cool on cookie sheet for 2 minutes before removing cookies to cooling rack to cool completely.

"Your suppose to mix the butter and eggs together FIRST and then mix them in with the other stuff". My mom said, "They just don't know what they're doing". *LOL* She is right though, it is alot easier too! You ARE suppose to mix the wet ingredients separate from the dry ingredients! And THEN mix them both together! =)

    I liked the premise of this for a cookie, and I do use the BC sugar cookie pouch ALL the time b/c my kids prefer them to any recipe I have tried. (I am an avid baker, so it isn't inexperience speaking). I took a pouch and divided it in half: I tried half as written, just using 1 egg white, 1/4 cup butter, 1/4 cup each of powdered sugar and flour and 1/2 cup chocolate chips. They were ok. My kids aren't home right now, but they aren't fans of milk chocolate and sugar cookies. (ok... so I tried these bc they were pink. :)) I then took the second half and tweaked it. I did the same basic ratio of ingredients, but added 2 tsp almond extract and white chocolate chips. WOW! Big difference. They are more like shortbread cookies should be. And while, personally, the white chocolate made them almost too sweet, I know my kids will like them. I think next time I will skip the extra powdered sugar. (notice? ...next time... I will do these again, but with my changes.) Thank you for the great idea and good start to a fun new addition to my recipe box.
