Ingredients

  • 1 box Betty Crocker™ Delights Super Moist™ Cherry Chip Cake Mix
  • 3 eggs
  • 1/2 cup butter, melted
  • 2/3 cup candy cane-flavored vodka (or water)
  • 1 tub (12 oz) Betty Crocker™ Whipped Strawberry Mist™ Frosting
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Cherry Frosting
  • Cotton candy
  • 1 can (6.7 oz) Betty Crocker™ Decorating Decors nonpareils

Steps

    Preheat oven to 350°F. In a large bowl or stand mixer, beat together cake mix, eggs, butter and vodka until smooth. Spoon into two 12-cavity muffin tins lined with cupcake wrappers. Bake for 17-21 minutes, or until the center springs back when touched lightly. Remove and cool completely.

    Stir both frostings together until smooth. Transfer both frostings into one large icing bag, fitted with a large star tip, spooning them into the left and right side of the bag. (Note: This is not a perfect science.)

    Pipe frosting onto cooled cupcakes, decorate with nonpareils, top with cotton candy.

    If desired, create mini cotton candy sticks by gently wrapping cotton candy around the top of paper straws. Snip straws to desired length and press into center of frosted cupcakes.

If desired, create mini cotton candy sticks for the tops of the cupcakes by gently wrapping store-bought cotton candy around the top of paper straws. Snip straws to desired length and press into center of frosted cupcakes. This sounds complex, but it’s surprisingly easy. Just gently wrap and pinch the cotton candy in place until it’s round on top of the straws. Now, prepare the frostings. I like adding a teensy splash of coconut and butter extracts because I promise it boosts the cotton candy flavoring. You’ll also want to stir the frostings until smooth and even. Swirl your icing on top and sprinkle with white pearl nonpareils. A gentle press of cotton candy straws into the center of each cupcake, and your little treats are done! Invite a friend over to play. Put on fuzzy slippers. Wear your favorite cartoon t-shirt. Tell yourself it’s your birthday. Eat cupcakes for dinner. Lick your fingers. Kiss a frog. Let all your dreams come true.
