    Ingredients

    • 12 whole lemons
    • 1 cup pink lemonade
    • 2 packages plain gelatin
    • 1 cup vodka

    Directions

    1. 1Cut the lemons in half. Scoop out the insides.
    2. 2Add the lemonade to a saucepan, sprinkle the gelatin over the juice. Let it sit for 2 minutes.
    3. 3Heat the lemonade over low heat, stirring, until the gelatin has dissolved, about 5 minutes.
    4. 4Stir in the vodka. Pour into the lemon halves.
    5. 5Refrigerate until set, about 4 hours.
    6. 6Cut the lemons into half and serve.

    This actually makes 48 shots, since you're quartering each of the 12 lemons. I made these shots for super bowl, and used strawberry lemonade and lemon jello. They were SO good & nice looking, but I would recommend that they be eaten immediately after setting. I made them a day ahead and by the time we ate them, they were a bit bitter from sitting in the rind over night. We added some sugar on top which took the bitterness away, but they are definitely better when eaten right away.

    Using plain gelatin means that you can make it any flavor that you would like. That's why we choose pink lemonade in this recipe. If you use flavored gelatin, you may want to skip the pink lemonade unless it will taste good with the flavor of the gelatin. Have fun with these. They're awesome!

    The lemons are a cute idea but if you don't have a sharp enough knife, it all crumbles. Personally I use ice cube trays. I also use the standard size gelatin and pink lemonade concentrate from the frozen food section, but I like mine sour.

    to hold the shape, simply cut the lemons in half and scrape them out. pour the mixture in the lemon halves when refrigating. when they are ready, slice them with a very shapr knife!

    A cup of vodka seems a bit much. I've made jello shots very frequently in college and I typically use a 1/2 cup of vodka. The ones we made with a whole cups where always too strong and the ones that no one wanted because it was like you were taking a straight shot of vodka.

    *hiccup* Tried this last night...but I deviated a bit. I used strawberry flavored jello and strawberry flavored vodka. I used 4 packets of jello (expecting a big crowd) and followed the directions on the packet. I subbed 2 cups of cold water with 2 (or 3) cups of vodka (my crew are lushes). I also added about a cup of sugar to sweeten it up a bit. I didn't have enough lemons to fill so I used a bundt cake pan to mold the remaining jello. I displayed the lemons shots around the bundt jello mold. Impressive! Can't wait to try some of your suggestions!

    Two 3.0 oz jello packets worked for me. The directions weren't very clear on that. But I did mine with lemon flavored hello and they were extremely sour!! Day 2 they were much better and mellow and tasted delicious!

    I just made these tonight.. Did it a little different. I used Knox, unflavored gelatin. Came in a box of 32 envelopes. used 4 for this recipe. I cut the lemons and squeezed about a cup of the juice, added that to two cups of pink lemonade. Then I cut up about seven or so strawberries into very small pieces, added a little sugar and soaked them in 1/4 cup of Absolute Citron vodka. brought the juice to a boil. Added my gelatin to 3/4 of a cup of the vodka,stirred for a few minutes. Then I added the Strawberries and the heated juice... mixed, poured into the lemon halves and put them in the fridge for about two hours. they came out delicious! However, next time I will use 1 1/2 of vodka.
