    Ingredients

    • 1  cup yellow cornmeal
    • 3/4  cup water
    • 3 1/4  cups boiling water
    • 1 1/2  teaspoons salt

    Directions

    1. 1Mix cornmeal and 3/4 cup water in 2-quart saucepan. Stir in 3 1/4 cups boiling water and the salt. Cook, stirring constantly, until mixture thickens and boils; reduce heat to low.
    2. 2Cover and simmer about 10 minutes; stirring occasionally, until very thick; remove from heat. Stir until smooth.

    Being diabetic, I cannot eat a lot of pure carb dishes so I'm wondering if I couldn't add some egg whites, either real or powdered, for protein. I know some of the recipes call for cheese which would do the same thing, so that makes two high protein recipes for polenta!!
