    Ingredients

    • 45  ml olive oil
    • 115  g finely chopped celery
    • 86  g finely chopped carrots
    • 67  g finely chopped onion
    • 948  g fresh tomatoes, peeled, and chopped
    • 2  (794g) cans Italian plum tomatoes, drained, chopped
    • 30  ml sugar
    • 15  ml chopped fresh thyme
    • 2.5  ml salt
    • 1.2  ml pepper
    • 2  garlic cloves, minced
    • 60  ml chopped fresh basil

    Directions

    1. 1Heat oil in large saucepan over medium-high heat until hot. Add celery, carrots and onion; cook about 10 minutes or until vegetables are tender and begin to brown, stirring occasionally.
    2. 2Add all remaining ingredients except basil; mix well. Bring to a boil. Reduce heat; simmer 20 minutes.
    3. 3Stir in basil. Simmer an additional 5 minutes.
    4. 4To puree sauce in batches, either pass sauce through food mill, or puree sauce in food processor bowl with metal blade and strain through coarse strainer. Serve over hot cooked pasta.
