    Ingredients

    • 3 tablespoons olive oil
    • 4  boneless pork chops, about 1-inch thick
    • 2  shallots, finely chopped
    • 1/4 cup dry white wine
    • 2 tablespoons heavy cream
    • 1 tablespoon Dijon mustard
    • 1 tablespoon chopped fresh tarragon
    • salt and pepper to taste

    Directions

    1. 1Preheat oven to 400 degrees F. Season pork chops with salt and pepper. Heat 1 tablespoon olive oil in large skillet over medium-high heat. Brown pork 2-3 minutes per side. Transfer to casserole dish and roast in oven until cooked through, 5-7 additional minutes.
    2. 2Meanwhile, add shallots and 1 tablespoon of olive oil to the skillet and cook until soft. Add wine and simmer until reduced by half. Add cream and simmer until sauce just thickens. Stir in mustard.
    3. 3To serve, top pork with sauce and tarragon.
