Just tried this tonight after seeing it in this month's Real Simple magazine. It's totally delicious and truly takes only 20 minutes to make.

Ingredients

cup long-grain white rice
3
tablespoons olive oil

bone-in pork chops, about 1-inch thick
1
bunch broccoli, cut into florets
2
cloves garlic, chopped
2
tablespoons soy sauce
Salt and pepper to taste

Directions

  • 1 Preheat oven to 400° F. In medium saucepan cook rice according to directions on package.
  • 2 Next, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season pork with salt and pepper. Cook until browned, about 2-3 minutes per side. Transfer skillet to oven and roast until pork is cooked through, 6-8 minutes.
  • 3 Meanwhile, heat remaining 2 tablespoons of olive oil in second large skillet over medium-high heat. Add broccoli, garlic, soy sauce and 1/3 cup water. Cook until broccoli is tender, 5-6 minutes.
  • 4 Serve rice, pork and broccoli together and enjoy.
