Tips & Techniques

  • If potatoes are shredded ahead of time, place in bowl and cover with cold water. When ready to use, drain and squeeze dry with paper towels.

Ingredients

  • Oil
  • 3  cups shredded peeled potatoes, drained on paper towels
  • 1  cup shredded carrots
  • 1/2  cup finely chopped onion
  • 1  tablespoon chopped fresh chives
  • 3  tablespoons all-purpose flour
  • 4  eggs, beaten
  • 1  teaspoon salt
  • 1/8  teaspoon pepper

Directions

  1. 1Heat 1/4 inch oil in heavy skillet over medium-high heat. Meanwhile, in medium bowl, combine potatoes and remaining ingredients; mix well.
  2. 2Using about 1/3 cup mixture for each, form 9 patties 3 to 4 inches in diameter. Cook 2 to 3 minutes on each side or until lightly browned. Drain on paper towels. Serve immediately.
