Potato Pancake Recipe - Oktoberfest Food

These hash brown based potato pancakes are quick and easy for any Oktoberfest meal. Calls for cream (or milk) and two eggs.

Ingredients

  • 2 lbs Shredded Potatoes or equivalent packaged hash browns
  • 4  cups very hot water
  • 1/4 cup heavy cream
  • 1 tablespoon all-purpose flour
  • 1  teaspoon salt
  • Dash of pepper
  • 2  eggs, well beaten

Directions

  1. Cover shredded potatoes with very hot water in 2 1/2-quart bowl. Let stand uncovered 15 minutes. Drain thoroughly on paper towels.

  2. Stir together potatoes and remaining ingredients.

  3. Heat cast iron griddle or skillet over medium-high heat or electric griddle to 375º; grease well with oil and a little butter. (Surface is ready when drops of water sizzle and disappear.)

  4. Drop potato pancakes by tablespoonfuls onto hot griddle. Cook about 3 minutes on each side or until brown
