    Ingredients

    • 2 eggs, beaten
    • 2 tbsp unbleached all-purpose flour
    • 1/4 tsp baking powder
    • 1/2 tsp salt
    • 1/4 tsp ground pepper
    • 6 medium Russet potatoes, peeled and finely shredded
    • 1/2 cup finely chopped onion
    • 1/4 cup vegetable oil

    Directions

    1. 1Squeeze all excess liquid from shredded potatoes. Combine potatoes with eggs, flour, baking powder, salt, pepper and onion. Let mixture sit 10 minutes so all the flavors come together.
    2. 2Heat a griddle or a large skillet over medium to medium-high heat. Once griddle is hot, pour on vegetable oil. Using a slotted spoon or your hands, take 1/3-cupfuls of the potato mixture, squeeze out excess liquid and form into a patty shape about 5 inches across. Place patty on griddle and heat on each side until crispy and deep golden brown.
    3. 3Remove pancakes from griddle and serve immediately with apple sauce or sour cream.

    I make these with leftover mashed potatoes. I saute the onions with some garlic before adding them to the potatoes. I also add a little shake or two of onion powder and garlic powder and sometimes some hot sauce. Ideas are limitless!! Very good use of leftovers!!!

    MY MOTHER USED TO MAKE THESE WHEN I WAS A KID. THEY ARE THE BEST. WE HAD TO SHREDD 10 TO 15 POULDS OF POTATOES AT A TIME. THERE WERE SIX OF US I HAD FORGOTTEN THE EXACT AMOUNT OF EACH INGREDIENTS. THESE ARE IDENTICAL. CAN'T SAY ENOUGH. THANK YOU SO VERY MUCH
