Enjoy this apple-pecan bread topped with brown sugar and butter glaze - perfect addition to fall meals.

Ingredients

cups chopped pecans

container (8 oz) sour cream
1
cup granulated sugar

eggs

teaspoons vanilla

cups Gold Medal™ all-purpose flour

teaspoons baking powder

teaspoon baking soda
1/2
teaspoon salt
1 1/2
cups finely chopped peeled Granny Smith apples (about 3/4 lb)

cup butter or margarine
1/2
cup packed light brown sugar

Directions

  • 1 Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan with shortening and lightly flour, or spray with baking spray with flour.
  • 2 Spread 1/2 cup of the pecans in ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until light brown. Cool.
  • 3 In large bowl, beat sour cream, granulated sugar, eggs and vanilla with electric mixer on low speed 2 minutes or until blended. Beat in flour, baking powder, baking soda and salt just until blended. Stir in apples and toasted pecans. Spoon batter into loaf pan. Sprinkle with remaining 1 cup pecans; lightly press pecans into batter.
  • 4 Bake 50 minutes. Cover loosely with foil to prevent excessive browning. Bake 10 to 15 minutes longer or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack.
  • 5 In 1-quart heavy saucepan, heat butter and brown sugar to boiling over medium heat, stirring constantly; boil 1 minute. Spoon glaze over top of bread; cool completely, about 1 hour.
Tips  

To freeze, cool bread completely; wrap in plastic wrap, then in foil. Freeze up to 3 months. Thaw at room temperature.
