I made this dip, and had plenty leftover, even after a party. I took the leftovers, put them in a graham cracker crust, and stuck it in the freezer. Then I cut the pie into pieces, drizzled with caramel and pecans, and had a fantastic frozen pumpkin cheesecake pie!

I just made this with half the sugar, used fat free cream cheese, light cool whip, and reduced fat sour cream for a lighter version... Still was amazing and my kids loved it!

I cleaned out a real pumpkin and served it that way. If you have the right sized pumpkin and bowl, you can put the dip in a bowl and rest the bowl in the pumpkin as well so it looks like it's in the pumpkin but it's actually in a bowl.

Let me ask you something... did you use a sugar pumpkin as the container or is that just a decorative dish? The presentation makes it!

I made this as an extra thanksgiving treat for food day at work. Everyone was hesitant at first when I described it, but then they all dug in and it was gone within an hour!

I made this MINUS the ginger and used additional cinnamon, nutmeg and allspice. I also added drops of yellow & red food coloring to make it more orange in color. I toasted pumpkin seeds and put on top as a garnish and around the plate .... I should have gotten a picture BEFORE it was put on the table. The only thing that went faster than this dip was the queso.
