Blogger Brooke McLay from Cheeky Kitchen warms belly and soul with this warm, spiked Pumpkin Spice Hot Toddy - the perfect cocktail to sip on cold winter nights!

Ingredients

1
cup boiling water
1/4
cup pineapple juice
1/4
cup sugar-free apple juice
2
oz (1/4 cup) rum
2
oz (1/4 cup) butterscotch-flavored schnapps
2
tablespoons canned pumpkin (not pumpkin pie mix)
1
teaspoon pumpkin pie spice
Cinnamon sticks or additional pumpkin pie spice, if desired

Directions

  • 1 In 1-quart saucepan, beat all ingredients except cinnamon sticks with whisk until well mixed. Heat just to boiling.
  • 2 Divide mixture evenly between 2 large mugs. Garnish each with cinnamon stick or a sprinkle of pumpkin pie spice.
Tips

Pair this warm, cozy cocktail with a coffee cake, cinnamon-streusel bundt cake, or a bowl of butterscotch-topped ice cream for the ultimate after-dinner dessert!

For added pumpkin flavor, beat 1 tablespoon pumpkin-chai drink mix (available in the autumn at most local grocers) into the cocktail with whisk.
