    Ingredients

    • 3  tablespoons margarine or butter
    • 1  (1-lb.) pkg. frozen stir-fry vegetables, thawed
    • 1  (12-oz.) can PET® Evaporated Milk
    • 2  eggs
    • 1/2  teaspoon salt
    • 1/2  teaspoon minced garlic
    • 8  oz. (3 cups) uncooked rotini (spiral pasta), cooked as directed on package
    • 1/2  cup grated Parmesan cheese

    Directions

    1. 1In 3-quart saucepan, melt margarine over high heat. Add vegetables; cook until thoroughly heated.
    2. 2In small bowl, combine evaporated milk, eggs, salt and garlic; beat until well blended. Stir into vegetables. Cook over low heat until bubbly and thickened, stirring constantly.
    3. 3Add rotini and cheese; toss to coat well.
