Quick Fire Roasted Tomato Chicken Pasta

tablespoon extra-virgin olive oil

pound boneless, skinless chicken thighs

(18.2 oz) can Progresso Fire Roasted Tomato Recipe Starter
1 1/2
cups orzo
1/2
cup freshly grated Parmesan cheese
1/4
cup fresh parsley, for garnish
2
pinches coarse salt and freshly ground pepper

Directions

  • 1 Heat the olive oil in a large skillet over medium-high. Season the chicken with salt and pepper on both sides, and add to the skillet. Sear on both sides for 8 minutes total.
  • 2 Add the fire roasted tomato sauce and simmer on medium-low for 15 minutes.
  • 3 Shred the chicken with two forks right in the skillet.
  • 4 In the meantime, cook the orzo in a large pot of salted water until al dente. Drain and stir into the chicken.
  • 5 Off the heat add the parmesan and stir to combine. Add another pinch of salt and pepper.
  • 6 Garnish with parsley and serve immediately!

This pasta makes me think of a Jackson Five song.


A B C! Easy as one, two, three!

As simple as do re mi, A B C, one, two, three, baby, you and me girl!

Ya know? Because it's only three ingredients? Actually in total it's five. Six if you include salt. Seven if you include pepper. Okay, eight if you include olive oil. But I don't ever include salt and pepper as ingredients. I mean, they ARE ingredients. And vital ones at that. But in the spirit of Jackson Five, folks, I'm leaving it out of the total number. Don't be cross at me.

Alright, SO! Grab some chicken thighs, a Progresso Fire Roasted Tomato Sauce recipe starter, and some orzo. While you're at it, grab some fresh parsley and Parmesan cheese. They're not pictured because they were still in hair and makeup.

 

Searing the chicken

So as the song goes, it's A - sear your chicken. Season it. Both sides. Done.

 

Pouring in Progresso Recipe Starter

Then B - pour that sauce in, ohhhhh mama pour it in. Let it all cook and simmer for a few minutes.

Then B.2 - shred that chicken, right in the skillet! You can go willy nillly on it and get it super shredded, or keep it in bigger chunks. It's all about what makes you dance.

And then C - add the cooked orzo! Stir stir stir. Get it all incorporated and in love.

And then you scarf it up right out of the skillet! I MEAAAAN serve it in little bowls to your starving family?
