Relish this zesty cranberry bread - perfect for any holiday.

Ingredients

(15.6-oz.) pkg. cranberry quick bread mix
1/2
cup chopped nuts
1
tablespoon grated orange peel
1/2
cup orange juice
1/2
cup water

tablespoons oil

Directions

  • 1 Heat oven to 350°F. Grease and flour bottom only of 8x4- or 9x5-inch loaf pan. In large bowl, combine all ingredients. Stir 50 to 75 strokes with spoon until mix is moistened. Pour batter into greased and floured pan.
  • 2 Bake at 350°F. for 55 to 65 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes; remove from pan. Cool 1 hour or until completely cooled. Wrap tightly and store in refrigerator.
Tips  

Short on time? Doctor up a purchased cranberry bread mix with nuts and grated orange peel. To keep the loaf tender, don't overmix the batter.

The thin, colored outer peel of oranges, lemons and limes contains flavorful oils, while the white pith underneath is bitter. Be sure to remove just the colored part of the peel. To accomplish this, use the fine holes of a regular grater or invest in a citrus zester, a tool that resembles a vegetable peeler except it has a horizontal row of small holes instead of a long vertical blade. A zester removes longer strands of the peel or "zest." Another technique, although a bit more cumbersome, is to shave off the outer peel with a sharp paring knife or vegetable peeler, then use a chef's knife to chop it into shreds.
