Dinner ready in just 20 minutes! Enjoy this stir-fried chicken breasts and veggies recipe for a noodle soup-mix based warm and filling meal.

Ingredients

1
package (3 oz) chicken-flavor ramen noodle soup mix
3/4
lb chicken breast strips for stir-fry
2
teaspoons vegetable oil
1
cup frozen sugar snap peas (from 1-lb bag)
1
cup baby corn on the cob in water (from 8-oz can), drained
2/3
cup sweet-and-sour sauce
2/3
cup water

Directions

  • 1 In 1-gallon resealable food-storage plastic bag, place contents of seasoning packet from soup mix. Add chicken; seal bag and shake until well coated.
  • 2 In 10-inch nonstick skillet or wok, heat oil over medium-high heat. Add chicken; cook 4 to 5 minutes, stirring frequently, until no longer pink in center. Stir in remaining ingredients. Heat to boiling. Cover; cook 3 minutes.
  • 3 Uncover skillet; break noodles apart and add to chicken mixture. Return to boiling. Reduce heat to medium; cover and simmer 3 minutes, stirring occasionally.
Tips

If precut stir-fry chicken breast strips are unavailable, 3 boneless skinless chicken breasts can be used. Place them in the freezer until partially frozen, then slice them into thin strips.
