    Ingredients

    • 1 cup quinoa
    • 2 cups cold water
    • 1 bag Green Giant Steamers Garden Vegetable Medley
    • 1/3 cup julienne cut carrots
    • 2 tbsp - 1/4 cup Italian dressing

    Directions

    1. 1Rinse the quinoa under cool water thoroughly. Transfer to a medium-size saucepan. Add the 2 cups of water. Bring to a boil on the stove. Reduce the heat to medium-low and simmer for 15 minutes, covered. Remove from heat.
    2. 2While the quinoa is cooking, cook the Green Giant Steamers according to package directions.
    3. 3In a large mixing bowl, stir together the cooked quinoa and the Green Giant veggies. Add the carrots and toss well. Drizzle in the Italian vinaigrette and toss to coat. Adjust the amount of the vinaigrette to taste.
    4. 4Serve warm, immediately, or chill until ready to serve.
